Our pizza dough is cold fermented for 72 hours to develop a deeper, more complex flavour and a lighter, more digestible base. The slow fermentation process creates a naturally aerated dough that blisters beautifully in our Gozney stone baked ovens, giving you that perfect combination of crispy char and pillowy chew that you simply can't rush. Every base is made with care, time and craft — because great pizza starts long before it hits the oven.

Our menu can be adapted to accommodate dietary restrictions or preferences.

All pizzas are made on freshly stretched dough, cooked live in our Gozney stone baked ovens with a San Marzano tomato base and fior di latte mozzarella.
